Ingredients:
500g ripe mangoes(skinned) ,500g glutinous rice (soaked) ,3 cups thick coconut milk ,3 sprigs pandan leaves ,1 tsp salt ,1 tsp sugar
Sauce ingredients:
1 cup coconut milk ,1/2 tsp salt ,1/2 tsp sugar ,1/2 tsp rice flour ,2 sprigs pandan leaves
Method for sauce:
Bring to a boil and leave in a bowl to top over rice and mangoes.
Method:
1.Steam glutinous rice in steamer for 30 minutes.
2.Cook coconut milk with pandan leaves, salt and sugar until comes to a boil & then quickly mix into steamed rice. Cover rice 20 minutes with babana leaves & stir once to mis.
3.To serve ,arrange sliced mangoes on a plate & place a ladle of glutinous rice another side. Serve immediately with sauce .
